I believe in a literal interpretation of ‘you are what you eat’ – that what we put in our mouths is the single largest influence we can have on our health. From my own research and experience, I feel that the best thing to put in our mouth is food as close to the way God created it as possible.
Many would agree with this simple hypothesis, but it’s the “living it out” that gets overwhelming. To avoid all the over-processed, additive-laden packaged foods in the typical American diet means a lot of cooking from scratch. Who has time to spend all day in the kitchen?!
Very few of us–and that’s why I wrote this book. Even as I was becoming convinced of what I must do to feed my family well, that family was growing. We had one, two, then three children in less than 4 years. We moved twice. I wrote a blog, sewed, and pursued a passion-filled life all while trying to prepare most of our family’s food from scratch. Over time, I found many little ways to save time, and had the occasional brainstorm on how to better fit nourishing food preparation into our busy days.
You and I both know it’s not enough to be handed a recipe and be told “This is good for you—make this!” If it’s a new technique (like making yogurt) or calls for an ingredient we’ve never bought, we’re already overwhelmed. But the real challenge is figuring out how get the bread rising, stock simmering, and beans soaking, and still have a life not chained to your kitchen stove.
